				Grilled Yellowtail with Shio Koji
Koji enhances Buri’s umami
				◇ Ingredients ◇
Serves 1
						- 120g yellowtail fillet, skin on
 - A pinch of salt
 - 5g soy sauce
 - 20g shio koji (salted rice malt)
 - 1g sugar
 
◇ Way of making ◇
- step1.
Mix the soy sauce, shio koji and sugar well. Soak the yellowtail fillet in it overnight.
 - step2.
Grill or bake in an oven until brown.
