								Grilled
				Grilled Yellowtail with a citrus flavor
Traditional Yuan-yaki with the citrus of your choice
				◇ Ingredients ◇
Serve 1
						- 120g yellowtail fillet, skin on
 - A pinch of salt
 - 5g soy sauce
 - 10㎖ sake or white wine
 - 3g sugar
 - 1/4 juice and zest of yuzu or any citrus
 
◇ Way of making ◇
- step1.
Sprinkle the yellowtail with salt and rest for 30 minutes. Pat dry with a paper towel.
 - step2.
Mix the soy sauce, sake, sugar, yuzu juice, and grated zest well, and soak the yellowtail overnight in the fridge.
 - step3.
Grill or bake in an oven carefully without burning it until browned. Sprinkle it with finely chopped yuzu zest.
