								Fried
				Fried Yellowtail in Chinese-style Green Chive Sauce
Fried Buri with a kick of chives
				◇ Ingredients ◇
Serves 1
						- 100g yellowtail, cut into large pieces
 - Salt, pepper, cornstarch, frying oil as needed
 - 5g green chive, cut into 3cm-long
 - 2g ginger, cut into julienned
 - 3g green onion, cut into 3cm-long strips
 - 20g vegetable oil
 
Chinese starchy sauce
						- 50g stock
 - 2g cornstarch
 - Salt, Chinese rice wine as needed, umami seasoning as you like
 
◇ Way of making ◇
- step1.
Season the yellowtail with salt and pepper. Heat the frying oil to 170℃. Dust the yellowtail with cornstarch and deep-fry until golden brown. Drain the excess oil.
 - step2.
Heat a pan over medium heat, add the vegetable oil, and stir-fry the green chive, green onion, ginger, and the fried yellowtail.
 - step3.
Mix the stock, cornstarch, salt, Chinese rice wine, and umami seasoning well, and add to the pan. Cook until it thickens.
