				Fried Yellowtail in Ginger Starchy Sauce
Aroma of spicy ginger stimulates your appetite
				◇ Ingredients ◇
Serve 2
						- 120g yellowtail fillet, skin off, cut into bite size
 - Salt, cornstarch, frying oil as needed
 - 60㎖ stock or dashi
 - 6g light soy sauce
 - 2g cornstarch
 - 4㎖ water
 - Julienned ginger, soaked in water (ginger needles)
 
◇ Way of making ◇
- step1.
Season the yellowtail with salt and dust with cornstarch. Heat the frying oil to 170℃ and deep-fry until golden brown.
 - step2.
Season the stock with light soy sauce. Mix 2g cornstarch with water and dissolve well.
 - step3.
Heat the stock in a saucepan, add the cornstarch mixture, and cook until it thickens. Add one-fourth of the julienned ginger.
 - step4.
Place the fried yellowtail on a dish, pour the starchy sauce, and top it with the rest of the ginger.
