				Simmered Sea Bream Collar
Traditional Japanese dish to enjoy one of the most delicious parts
				◇ Ingredients ◇
Serves 1
						- 1/2 sea bream collar
 - 10g ginger, thinly sliced
 - 20g Japanese leek, grilled
 - 100㎖ sake
 - 200㎖ water
 - 30g mirin
 - 30g sugar
 - 15g soy sauce
 
◇ Way of making ◇
- step1.
Trim the fins of the sea bream collar, blanch it, and rinse under the running water to remove scales and clean.
 - step2.
Place the collar in a pan with ginger, sake and water and boil over medium heat. After skimming the foam, lower the heat and add the grilled Japanese leek.
 - step3.
Cover the surface with a foil loosely and simmer for 10 minutes.
 - step4.
Add the mirin, sugar, and soy sauce and simmer for 10 more minutes.
 - step5.
Scoop the reduced sauce with a spoon, pour over the collar and simmer until it thickens.
